Service follows one full dinner at Inter Scaldes
An Amuse Films short goes inside the pass at Inter Scaldes in Kruiningen, where chef Jeroen Achtien is rebuilding a kitchen one star short of where it stood.

Service, the latest short from Amuse Films, follows one full dinner from first prep to last plate inside the pass at Inter Scaldes, the Relais & Châteaux dining room in Kruiningen, Zeeland.
The 18-minute film carries no narration and no talking-head interviews. The camera stays fixed on the pass, the stoves and the plating counter, watching orders arrive, get called and go out over the course of one service, in real time and largely uncut.
A kitchen down one star
No narration, no interviews, just one kitchen getting through one service.
Inter Scaldes, a converted farmhouse on the Zeeland waterline, has drawn diners out to Kruiningen for decades on the strength of its kitchen rather than its location. It held three Michelin stars for years under chef Jannis Brevet, who stepped back at the end of 2023. His successors, Jeroen Achtien and his wife Sanne, took over the kitchen and dining room that September; the restaurant has since held two stars under their leadership, one short of where it stood before.
Service does not dwell on that history in voiceover. It simply shows the current kitchen at work: a smaller brigade, tighter timings, the same tasting-menu format rebuilt dish by dish under new hands.
Eighteen minutes, no cutaways
Amuse Films shot the episode over a single Saturday sitting, using two fixed cameras rather than a handheld crew moving through the room. The approach favours the rhythm of a real service over dramatic close-ups: tickets fill the rail, a sauce gets tasted and adjusted, a dish comes back for a wipe of the rim before it leaves the pass.
The film sits alongside Amuse's written report on Inter Scaldes' rebuilding, offering the same story from inside the kitchen rather than across the table, without the running commentary a dining-room seat would normally supply. Further episodes in the Films strand are planned from other dining rooms working through change, from new ownership to rebuilt teams, using the same fixed-camera, no-commentary approach throughout the series.
