Michael Warring, Vallejo's only fine-dining restaurant, serves its last dinner on December 5, 2026, before chef Michael Warring moves the kitchen into his own home.

Warring and his wife are converting the garage of their house in Benicia, the next town over, into a small dining room: a custom pass, an open view of the stove, and a counter built for eight seats.

The Vallejo restaurant has run a tight format for years: a seven- or twelve-course tasting menu, served Thursday through Sunday, booked only by phone. A credit card holds the table but isn't charged, and cancellations inside 24 hours can carry a fee. The Michelin Guide lists the room as a counter-style space with a handful of tables and seven seats facing the kitchen, in a city with few other fine-dining addresses.

Closing the dining room isn't closing the kitchen, it's just changing who pays the rent.

From dining room to garage

Warring first flagged the move to his mailing list in August, writing that "this space has an ending" but "the story doesn't." The December 5 close, confirmed by the San Francisco Chronicle, sets a firm date for the Vallejo address after years of counter service.

The Benicia build adds one detail beyond the kitchen: Warring is wiring in a small recording booth, where he plans to record a podcast with other chefs between services.

The move follows a wider pattern among tasting-menu cooks priced out of commercial rents, insurance and staffing costs: rather than close outright, some are shrinking the dining room to the size of a kitchen table, trading seats and turnover for lower rent, fewer staff and a format they can run without outside investors.

No date yet for the reopening

Asked when the home counter opens, Warring has given only a loose answer: somewhere between immediately and never. The remodel is still under way, and no booking system exists yet for the Benicia address.

Until then, Vallejo keeps its tasting menu through the first week of December. What, if anything, replaces Michael Warring in the city hasn't been announced.
