Alain Montigny serves a blind menu at L'Or Bleu in Théoule

The MOF chef has cooked above the Esterel coast since 2020. His one-star dining room serves only surprise menus built on the day's catch, and the prices have climbed since 2024.

Alain Montigny, Meilleur Ouvrier de France since 2004, runs L'Or Bleu in Théoule-sur-Mer on a menu diners never get to read. The one-Michelin-star dining room of the Tiara Yaktsa hotel serves six or eight courses chosen each evening by the chef, at €165 and €195.

The restaurant sits at 6 boulevard de l'Esquillon, on the coast road west of Cannes, between the red rock of the Esterel massif and the Mediterranean. Montigny has led the kitchen since 2020, according to Yonder, and the star followed within months, in early 2021. A profile published by Nice Premium on 24 October puts the blind format at the centre of the house.

Alain Montigny's route from Reims to the Esterel

At L'Or Bleu the guest gives up the menu, and the kitchen takes on all the risk.

Born in Champagne, Montigny entered the Reims hotel school at 14 and went from there to the Hôtel de Crillon in Paris. He joined the Dolce resort in Chantilly as second and became its chef in 2000. He won the Meilleur Ouvrier de France title in 2004, the same collar 13 cooks collected in Lille this month, and earned a Michelin star at Le Carmontelle, the resort's restaurant, in 2008.

He then moved to Chalet RoyAlp in Switzerland, where his kitchen also held a star, before taking the Théoule post. The Michelin Guide describes the result as modern cooking with a Mediterranean accent, balanced and subtle, and cites a roasted langoustine with beetroot tartare and a line-caught turbot with lemon-marinated courgette and sheep's milk brousse.

A blind menu at €165 and €195

Dinner runs Tuesday to Saturday, 19:00 to 21:30, according to the Théoule tourist office, whose listing was last updated in February 2026. There is no à la carte: the sequence follows the day's catch and local produce. Recent plates listed by Nice Premium include egg with chanterelles, lobster with rocket, pollack with parsnip and a fig course; the egg with girolles and focaccia is the dish Yonder calls the signature.

"When customers close their eyes, they must know what they have eaten," Montigny told Nice Premium. The team around him has stayed in place: Romain Lauvand as deputy chef, Laurent Martinetto on pastry and Benoit Sessegolo as head sommelier, with wine pairings offered on both menus.

The format puts the risk on the kitchen rather than the guest: with nothing written down, every course has to explain itself on the plate. It also depends on a fishing ground under pressure, where Mediterranean fishing quotas for 2027 keep the limits on trawlers.

The price has moved faster than the format. When Yonder reviewed L'Or Bleu in September 2024, the six-course menu cost €135 and the eight-course €189; today they cost €165 and €195. Blind, then, but not cheap.
