Mec Restaurant, Cathedral
Carmelo Trentacosti cooks in the sixteenth-century Palazzo Castrone at Via Vittorio Emanuele 452, facing the Cathedral, and holds the only Michelin star inside the city. The palazzo also houses an exhibition on Steve Jobs; the dining rooms have frescoed ceilings.
His caponata arrives as a cream with shavings of Modica chocolate and bread made for the dish, and a cheese trolley comes round before dessert. Dinner only, 7pm to 11pm, closed on Sunday. Price band €€€€.
Charleston by Giovanni Solofra, Libertà
The Charleston has been a Palermo name since 1967 and once held two Michelin stars. It reopened at Piazzetta Flaccovio 6 on 29 November 2025 under Giovanni Solofra and Roberta Merolli, the couple who took Tre Olivi in Paestum to two stars.
The tasting menu, called Back to the future, comes in seven or nine courses and keeps house classics such as the fillet with whisky and the Coppa Charleston. Michelin listed it as a new entry in September; the stars of the next guide are announced on 12 November. Price band €€€€.
Gagini, Vucciria
In the sixteenth-century workshop of the sculptor Antonio Gagini, at Via dei Cassari 35, Mauricio Zillo sets Piedmontese and northern Italian recipes against Sicilian fish. In November 2021 it became the first restaurant in the city to win a Michelin star; the current guide lists it without one.
The inspectors single out tagliatelle made with 30 egg yolks, served with artichoke, citron and tuna bottarga. Price band €€€.

Gianfilippo Gatto has been chef-patron at Via Judica 21/23 since 2022. The tables at Piazza Croce dei Vespri 6 sit under the palazzo where Luchino Visconti filmed the ballroom scene of The Leopard. The cooking is modern and seasonal: Michelin cites grilled spiced lamb chops with aubergine caponata and wild greens. L'Ottava Nota, Kalsa
Chef-patron Vladimiro Farina mixes Sicilian and Spanish flavours at Via Butera 55, a short walk from the marina. The dish the guide picks is a salmorejo of cherry tomatoes, watermelon and peach with basil and croutons. Dinner only, closed on Sunday. Price band €€€.
Palazzo Branciforte, Olivella
This restaurant occupies the courtyard of a late sixteenth-century palazzo at Via Bara all'Olivella 2 that also holds an archaeological collection. A retractable roof opens the room to the sky in good weather. The kitchen is modern Italian; it is closed on Monday and takes bookings directly. Price band €€€.
Buatta Cucina Popolana, Vucciria
The city's only Bib Gourmand is in a former shop at Via Vittorio Emanuele 176. The menu is plain Palermo cooking that changes with the season: sarde a beccafico, offal, fish and vegetable dishes. Michelin's own note says to reserve, because locals and visitors fill it alike. Price band €€.
