Marcos Granda to open Paula de Marcos in Málaga in February

The sommelier behind six Michelin stars takes the Muelle Uno site José Carlos García left in September. The plan is tapas, Málaga wine by the glass and a kitchen open ten hours a day.

Marcos Granda, the sommelier and restaurateur whose restaurants hold six Michelin stars, will open Paula de Marcos at Muelle Uno in Málaga on 15 February 2027, he told El Español on 6 October. It is his group's first restaurant in the city, and it is not a fine-dining one.

The site is the 1,000-square-metre unit on the port vacated in September, beside the chapel and the seafood restaurant Godoy, according to Sur in English. Its previous tenant spent 15 years there: José Carlos García moved his starred restaurant to the Café de París in La Malagueta. Sur reported building work on the façade at the start of October, when Marcos Granda declined to comment. The announcement came days later through Onda Cero and El Español.

The name is that of his daughter Paula, who is 18. The model, both outlets report, is a hotel lobby: a room to drop into at any hour, not a restaurant with two sittings. In El Español he calls it "the city's lobby".

Six Michelin stars elsewhere, and in Málaga a bar where a beer and a tapa will do.

What Marcos Granda plans at Muelle Uno

The kitchen will run without a break from 12:00 to 22:00, seven days a week. The menu is tapas, plates to share and charcuterie from Ronda, with an average spend of €40 to €45 per person, El Español reports, and the option of a beer and a tapa at the bar. On wine, he says he will try to list 80 to 90 per cent of Málaga's wineries by the glass.

Around 20 people will work there, drawn from staff already with the group. The plans include a large terrace, an events area and live music by local acts. The interiors are by Paco Lago and the branding by Narita Comunicación, both from Málaga. No chef has been named, and neither a cover count nor an investment figure has been given.

Six stars, none of them in this room

The stars are spread over five restaurants: Skina (two) and Nintai (one) in Marbella, Clos and Toki in Madrid (one each) and Marcos in Gijón (one). Until this year he had another at Ayalga in Ribadesella, a project he has since left, Sur notes. Paula de Marcos is the group's sixth restaurant and its first opening in four years, according to El Español.

Three years ago he had planned In-Formal at the Gourmet Experience of El Corte Inglés, and the project fell through, Sur recalls.

"I am a waiter," Marcos Granda tells El Español, and service is meant to be the selling point. The open question is arithmetic: a group built on starred dining rooms has to fill 1,000 square metres for ten hours a day at €45 a head. The building work comes first, and it has four months.
