CHEF:IN Awards Hamburg spotlights women in fine dining

The CHEF:IN Awards Hamburg handed out its first prizes on September 14, the first ceremony built exclusively around women in German haute cuisine.

Julia A. Leitner and Sarah Hallmann of Hallmann & Klee shared Köchin des Jahres, the chef-of-the-year title, presented by Transgourmet Cook at Foodlab Hamburg. Larissa Metz of Vendôme in Bergisch Gladbach and Emma Betti of Tantris Maison Culinaire in Munich took the pastry-chef award, and Ilona Scholl of Tulus Lotrek was named host of the year, among nine prizes across seven categories.

The organisers built the evening around a specific number: roughly four percent of Germany's award-winning top chefs are women, a gap wide enough that a generalist award, split by no category at all, rarely surfaces the same names twice.

A category built to fix a gap, not celebrate one

CHEF:IN was designed as a corrective rather than a niche sideline, organisers said in the run-up to the ceremony. Splitting fine dining's usual categories, chef, pastry chef, host, sommelier, by gender for one night does not fix hiring or promotion further down a kitchen, but it puts names in front of guides and trade press that a mixed-field award has tended to overlook.

Hallmann & Klee's win lands the restaurant its own moment after years spent largely in the shadow of bigger Cologne-area addresses, and gives Leitner and Hallmann a shared title unusual in a discipline that still favours a single name on the pass over a joint one.

Where it sits next to Germany's other lists

The ceremony arrives in the same September stretch as StarChefs naming its own Rising Stars class in the Bay Area and Food & Wine's Best New Chefs revealed in New York, part of a busier-than-usual autumn for chef awards on both sides of the Atlantic. Whether CHEF:IN becomes an annual fixture depends on what Transgourmet and Foodlab Hamburg commit to for next year, a decision organisers say is still under discussion and not yet confirmed.
