Ein Prosit Udine brings Lima, Buenos Aires and Paris to Friuli

The 27th edition runs until Sunday with more than 90 chefs and dinners priced from €90 to €250. Three recent World's 50 Best winners are on the bill, mostly in shared kitchens.

Ein Prosit Udine, the gastronomy festival that opened its 27th edition on 14 October, has brought more than 90 chefs to the Friulian city until Sunday 18 October. Dinners cost between €90 and €250, and three of the last six winners of The World's 50 Best Restaurants are cooking.

Those three are Mitsuharu "Micha" Tsumura of Maido in Lima, the 2025 winner; Virgilio Martínez of Central, voted best in 2023; and Mauro Colagreco of Mirazur, voted best in 2019. The programme runs to more than 130 events, with chefs from 18 countries, Messaggero Veneto reported on 8 October.

The festival is organised by Co.Pro.Tur., the tourism consortium of Tarvisio, Sella Nevea and Passo Pramollo, whose director Claudio Tognoni curates it with Paolo Vizzari and Manuela Fissore.

At Ein Prosit the scarce item is not the famous chef but the free seat.

Who is cooking at Ein Prosit Udine

Most dinners put two to five chefs from different countries in one kitchen, in restaurants in Udine and in nearby Buttrio, Tavagnacco and Dolegna del Collio. The most expensive, at €250, is on Sunday at Le Fucine Gourmet in Buttrio: Martínez and Colagreco with Guido Tassi and Pablo Rivero of Don Julio in Buenos Aires. The same two guests join Franco Pepe of Pepe in Grani for a pizza lunch at Alla Lampara on Sunday, for €90.

Pía León of Kjolle in Lima cooks on Thursday with Antonia Klugmann at L'Argine a Vencò and on Friday at Vitello d'Oro with Eric Robertson and Daniel Hadida of Pearl Morissette in Canada, both at €180. Ana Roš of Hiša Franko in Kobarid, Slovenia, shares the €210 dinner on Friday with Emmanuel Pilon of Le Louis XV in Monaco that marks the first public outing of Gault&Millau Italy. Other guests come from Dubai (Himanshu Saini, Trèsind Studio), Kuala Lumpur (Darren Teoh, Dewakan), Cape Town (Peter Tempelhoff, FYN), Istanbul (Maksut Aşkar, Neolokal) and Paris (Bruno Verjus, Table).

Tsumura leaves fine dining at home. On Sunday he serves the Peruvian grilled chicken of his Tori Polleria at Indiana Station, in four half-hour slots from 11.30am.

Seats, food trucks and the closing weekend

Every dinner has a fixed number of seats and is booked through the host restaurant or online, according to the official programme. On 11 October il Nord Est wrote that places were already nearly sold out. Wednesday's opening dinner at Le Fucine Brasserie, a tribute to Bittor Arguinzoniz of Asador Etxebarri, was by invitation only.

New this year, according to Messaggero Veneto, are three food trucks in the centre from Friday to Sunday: one for pasta, one for pizza and one for dishes from the countries taking part. For a visitor arriving now, the useful list at Ein Prosit Udine is not the chefs but the seats still free.
