Kwame Onwuachi cookbook All Hours arrives September 22

The Kwame Onwuachi cookbook All Hours: Crazy Good Food for Whatever, Whenever reaches shelves on September 22, his third book and the first built entirely around off-hour eating.

What's inside the Kwame Onwuachi cookbook

The book runs 288 pages, published by Knopf and co-written with James Beard Award-winning food writer Joshua David Stein. It skips courses for the clock, moving through sections such as Morning Glories, Top Shelf Snacks and New Favorite Dinners, tracking what Onwuachi actually cooks between service and sleep.

Seven recipes cited so far, and each one assumes you're hungry at an inconvenient hour.

Recipes named so far include Corn Milk French Toast, the Bodega BEC and Souped-Up Top Ramen for the early hours, then Red Stew Chicken Parm, Drunken Noodles alla Vodka, Creole Sausage Roll-Ups and a smoky Brussels Sprout Suya for whenever dinner actually lands.

Onwuachi is a James Beard Award winner and was named to Time's 100 Most Influential People in 2025. His New York restaurant Tatiana has appeared on the New York Times' list of the country's 100 best restaurants every year since 2022, part of a run of New York restaurant investment and openings this year.

His footprint now spans Dōgon in Washington D.C., Las'Lap in Miami and Maroon, the Caribbean steakhouse he opened at Sahara Las Vegas in April. He was raised between New York City, Nigeria and Louisiana, a mix of cooking traditions he has carried into every kitchen since.

All Hours follows two earlier books: the 2019 memoir Notes from a Young Black Chef and the 2022 cookbook My America. Onwuachi is also the subject of a season of Netflix's Chef's Table.

A Resy night at Lincoln Center

Onwuachi marks the release with Resy at Lincoln Center Theater's Mitzi E. Newhouse Theater on September 22, a talk-show-style event followed by an after-party at Tatiana. Lincoln Center Theater and FreshDirect co-host alongside Resy.

A wider book tour runs the same stretch: Dōgon on September 16, Maroon in Las Vegas on September 17, Cookbook Larchmont in Los Angeles on September 19, Fish Cheeks NoHo on September 21 and 26, Tatiana on September 24 and 25, and Zahav in Philadelphia on September 26.

General tickets opened August 21, after a members-only presale for Amex Global Dining Access cardholders on August 19. The book itself lists at $40.
