Michelin Guide Spain 2027 gala moves to 1 December in Huesca
Spain's general election has pushed the star ceremony back a week. The venue stays in Huesca, and the province's eight one-star restaurants will cook the gala dinner together.

The Michelin Guide Spain 2027 gala will take place in Huesca on Tuesday 1 December, a week later than planned, after Spain's general election was called for 29 November. The venue stays the same: the Auditorio Carlos Saura at the city's Palacio de Congresos, from 19:00.
The new date was announced on 20 October at the Canfranc Estación hotel, the restored international railway station in the Pyrenees, at the launch of La Antesala de la Gala, a programme of events across the province. It is the first time the Spanish guide has taken its star ceremony to Aragón.
Why the Michelin Guide Spain 2027 gala moved
Huesca's whole starred map fits into a single kitchen brigade for one night.
The original date, 24 November, fell five days before the vote. Mónica Rius, communications director of Michelin for Spain and Portugal, told reporters in Canfranc that the guide had to guarantee the impact of the event. Miguel Pereda, the guide's sales and marketing director, called the change a necessary and responsible measure and said the guide regretted the inconvenience.
Television presenter Anne Igartiburu will host the ceremony, and cook Daniel del Toro will front the red carpet, streamed live on the guide's YouTube channel from 18:30.
Eight starred kitchens cook the dinner
The gala dinner is led by Carmelo Bosque of Lillas Pastia in Huesca, whose star dates from 1998 and is the oldest in Aragón. According to the guide, his menu reworks the province's traditional recipes with black truffle as the common thread. Cooking with him are the chefs of the province's seven other one-star restaurants: Toño Rodríguez (La Era de los Nogales, Sardas), Rubén Coronas (Casa Rubén, Hospital de Tella), Víctor Manuel Ovalles (Casa Arcas, Villanova), Iris Jordán (Ansils, Anciles), Eduardo Salanova (Canfranc Express, Canfranc-Estación), Josetxo Souto and Ramón Aso (Callizo, Aínsa) and Tonino Valiente (Tatau, Huesca).
That brigade is the province's entire starred map. The 2026 selection lists 18 restaurants in Huesca, eight of them with one star, a modest count next to the best restaurants in Madrid or the tables of San Sebastián. Isaac Claver, president of the provincial council, argues that Huesca has more Michelin stars per inhabitant than any other Spanish province.
Several of those stars are recent: Tatau won its star in 2015, Callizo in 2020, Canfranc Express in 2023 and La Era de los Nogales in the 2025 guide, with Casa Rubén the latest arrival.
Which restaurants join that list, and whether any of them climbs to two stars, will be known on 1 December. Until then, the province gets one more week of attention than it had planned for.
