Anne-Sophie Pic opens a Paris restaurant at Fondation Cartier
The dining room inside Jean Nouvel's building on rue de Rivoli takes its first bookings on 18 September, five days after her cocktail bar opened around the corner.

Anne-Sophie Pic opens her new Paris restaurant on 18 September inside the Fondation Cartier pour l'art contemporain at 164 rue de Rivoli, entered through the Porte Oratoire.
The room is called Anne-Sophie Pic Paris. Service is tight rather than long: lunch runs from 12.00 to 13.30 and dinner from 19.00 to 21.00, with reservations taken through the foundation's own booking system. The interiors are by the Moinard Betaille agency, inside the building Jean Nouvel designed for the collection.
The foundation describes the food as new creations built on the chef's principle of imprégnation, the slow infusion of one flavour into another that has been the house method in Valence for years. No menu prices had been published at the time of writing.
A museum restaurant is usually an amenity. This one is meant to be the reason.
What Anne-Sophie Pic opened first
The bar. Utopic, her first cocktail bar, opened on 4 September with its own entrance on rue de Marengo and a list of 22 drinks by head bartender Mael Jego, built from the same flavour pairings as the kitchen. Opening a bar two weeks before the dining room is a way of testing a room's traffic before the tasting menus arrive.
It replaces a Paris address rather than adding one. La Dame de Pic, her one-star restaurant on rue du Louvre, closed after thirteen years, Paris by Mouth reported this month. The name survives in Dubai and elsewhere in the group.
A museum restaurant with a kitchen behind it
Museum dining is usually a concession stand with better lighting. Handing it to the chef the foundation calls the most decorated woman in the profession is a different bet: the restaurant becomes a reason to cross the Palais-Royal, not an amenity for people already there.
Paris has been redistributing its kitchens all year. Taillevent is changing hands, Aldéhyde reopened this week under its own sous-chefs, and Matthias Marc has left the city for the Jura. Pic is moving in the opposite direction, from a street address to an institution with an opening-hours page and a queue at the door.
Whether the 90-minute service holds through a Saturday is the thing to watch. Museums close at six; kitchens do not. More openings are tracked in the restaurants section.
