Harts Group opens Los Primos cervecería in Borough
The Barrafina and El Pastor owners are swapping their four-year-old Parrillan grill for an all-day Spanish bar with £2.50 cañas and no reservations.
Harts Group has closed Parrillan at Borough Yards to make way for Los Primos, an all-day Spanish cervecería opening in November with £2.50 cañas and a walk-in-only counter.
The London restaurant group, which also runs Barrafina and El Pastor, is replacing its four-year-old Parrillan grill with a format modelled on neighbourhood beer bars found across Spain. Los Primos will serve coffee and churros in the morning, bocadillos of tortilla, pork loin, chorizo or egg at lunch, and beer, wine, cider and vermouth on tap into the evening.
The menu, developed with Barrafina global culinary director Patricia Roig and UK group executive chef Antonio González Milla, also includes jamón croquetas, crispy pigs' ears, tuna empanadas, cider-cooked chorizo and kikos, cold bites displayed in a glass cabinet along the bar rather than ordered from a printed menu.
A grill closes so a bar that opens at breakfast can take its place.
A cheaper format for an expensive corner of London
Cañas, a third-of-a-pint pour, are priced at £2.50, with media and doble sizes also on tap. Managing director Anna Watkins said the group "wanted to pay homage to the cervecerías we know and love: a home away from home found in every neighbourhood," while chief executive Sam Hart called the format "accessible spaces that won't break the bank, without compromising on quality."
The pitch is notable in Borough, where Barrafina and Bar Daskal already draw queues nearby and Barcelona restaurants elsewhere have been swapping Michelin ambitions for tapas-bar volume. Los Primos bets that standing-room pricing, not another tasting menu, is what keeps a site busy through a full day rather than two dinner services.
Borough Yards fills the gap Parrillan leaves behind
Parrillan opened in 2022 alongside Barrafina and Bar Daskal as the trio's grill-focused sibling; Harts Group has not detailed why it chose to close a working restaurant rather than open Los Primos on a new site. The move comes as the wider market faces its own pressure, with Borough Market's own bakery tenant Bread Ahead confirming it will not renew its lease nearby.
Los Primos opens at 4 Dirty Lane, next to Borough Market, with an exact date still to be confirmed.
