Michelin Guide Netherlands 2026: two newcomers land two stars

Azurite in Delft and Suis near Valkenburg skip straight to two Michelin stars as De Librije keeps three under a new chef, while Amsterdam goes without a single new star.

Michelin Guide Netherlands 2026 added nine first-time stars on 5 October, with two restaurants, Azurite in Delft and Suis in Schin op Geul, entering the guide directly at two-star level rather than working up from one.

Azurite, run by chef Mario Ridder in Delft, was one of the two debuts. Starting at two stars is rare in any Michelin market; inspectors typically award a first star before considering a second, and two restaurants doing it in the same year is rarer still.

Suis, in Schin op Geul near Valkenburg, matched that jump. Chef Ralf Berendsen opened the restaurant at the end of April 2026 after leaving La Butte aux Bois, which makes a two-star rating inside six months of opening one of the faster climbs the guide has recorded in the Netherlands.

Starting at two stars, as Azurite and Suis did, says more about how fast Dutch fine dining is moving than any single award can.

De Librije in Zwolle kept its three stars, the country's only restaurant still holding the top rating. Nelson Tanate now leads the kitchen, having taken over after co-owner and chef Jonnie Boer died in April 2025.

Among the new one-star venues is Le Epifaan in Veeningen, run by Jarno Eggen, who previously cooked at the two-star De Groene Lantaarn in Staphorst before it closed.

No new star landed in Amsterdam

The capital was shut out of this year's additions. No Amsterdam restaurant won a new star, and two of the city's existing holders, Daalder and De Juwelier, lost theirs, the guide's only Amsterdam losses this cycle.

Stars spread beyond the capital

The Netherlands holds 119 starred restaurants in total, unchanged from last year, with this year's gains concentrated outside Amsterdam. The pattern continues a shift already visible on the map of Dutch stars, where Zwolle has carried outsized weight for a city its size, and where our own guide to what to eat in Zwolle covers the ground around De Librije.

Michelin gives no public reason for a star loss, so Daalder and De Juwelier's drop stands without further comment from the guide. The next update to the Dutch selection is not due for another year.
