Michelin Guide Netherlands adds nine restaurants to its online selection this month, two weeks before the country's stars ceremony in Maastricht.

The list spans eight towns and cities. Two restaurants sit in Amsterdam, one opens in The Hague, and the rest spread across Veeningen, Maastricht, Grave, Sint-Oedenrode, Groningen and Zwolle. None carries a star, a green star or a Bib Gourmand yet; the Michelin Guide Netherlands only confirms those at its October ceremony.

Chef Dennis Huwaë moves Daalder into a larger space inside the Het Sieraad building in Amsterdam West. The kitchen keeps its mix of global references, from a light bao with shrimp to a reworked stroopwafel for dessert, alongside an extensive wine list. Amsterdam's dining scene keeps shifting fast this year, as shown by the recent opening of Élan in the former Maris Piper space.

Nine new addresses, zero stars so far: Michelin asks diners to trust its scouting for now.

Nine new names join Michelin Guide Netherlands

In The Hague, EVE Paleisstraat opens inside boutique hotel ADAM + EVE, opposite Paleis Noordeinde. Erik and Juliën van Loo, both trained at the two-star Parkheuvel, run a kitchen built on deep sauces, precise technique and customisable portions.

Jarno Eggen relocates his cooking to Le Epifaan in Veeningen, inside a renovated former Poortman building. In Maastricht, Danny Vanderhoven opens Le Philippe, a Parisian-style bistro serving steak tartare and cod in a dugléré sauce. Maikel van Veen cooks at Ovum, inside the Arsenaal boutique hotel in Grave, mixing Asian technique with dishes such as veal stroganoff.

Chef Tijn and sommelier Marly run Petite in Sint-Oedenrode, a bistro built around Dover sole meunière and a wide European wine list. Further north, Restaurant Luwte in Groningen works with regional ingredients such as seaweed and North Dutch beef under chef Falk. In Amsterdam, Angelo Kremmydas pairs Greek and French cooking at Restobar Massalia, and in Zwolle, Isabelle Boer opens Wijn Boer, built around her family's wine trade and dishes like meatballs in tomato sauce.

Stars ceremony follows in Maastricht

Michelin hands out stars, green stars and Bib Gourmand badges at the MICHELIN Guide Restaurant Ceremony Nederland, set for October 5 at MECC Maastricht, alongside the hospitality trade fair BBB Maastricht. Michelin confirmed in 2025 that Maastricht keeps hosting the ceremony through 2029. The Belgian neighbour has moved just as fast: Mero in Antwerp joined the Michelin Guide selection earlier this year.

Whether any of the nine restaurants in this Michelin Guide Netherlands update earns a star or a Bib Gourmand will be clear in a week. The guide's next quarterly update is not due before the new year.
