Stanley opens with 200 seats at Sydney's Manly Wharf

Chef Louis Tikaram has brought his Brisbane Cantonese hit north to Sydney, with tableside Peking duck and live seafood tanks at Manly Wharf.

Chef Louis Tikaram has opened Stanley Manly Wharf, a 200-seat Cantonese restaurant in Sydney, bringing tableside Peking duck and live seafood tanks to the Northern Beaches.

The Manly Wharf site is the second Stanley: the original has run at Brisbane's Howard Smith Wharves since 2019, built around live seafood, dim sum and Chinese barbecue. For Tikaram, the Sydney opening is a return rather than a debut. He spent a decade in the city's kitchens, including stints at Longrain, Bentley Restaurant + Bar and Tetsuya's, before the Brisbane project took him north.

The new dining room seats more than 200, a scale that lets it run a custom-built duck oven and full tableside carving service, alongside tanks that keep crab, lobster and fish alive until they are ordered. That combination of size and live product is unusual on the Northern Beaches, where most Chinese kitchens run considerably smaller.

Manly gets a destination restaurant

Manly Wharf has spent the past few years adding restaurants aimed at Sydney-wide visitors rather than just local trade, and Stanley is the most ambitious of them so far. A 200-seat room with a duck oven is a bet that diners will cross the harbour specifically for the meal, not just drop in after the ferry.

The Brisbane original's reputation removes some of that risk. Diners who already know the Howard Smith Wharves restaurant arrive with an idea of what the kitchen can do, which matters more on a site this size than it would for a smaller opening.

An opening offer, and a wider bet on scale

To mark the launch, Manly and Northern Beaches locals dining at Stanley through the end of September get a complimentary glass of wine or beer with their meal, a fairly standard opening tactic for a restaurant this size trying to build repeat local trade fast.

The bigger question is whether Sydney's appetite for large-format dining extends as far north as Manly, away from the CBD kitchens that usually carry that scale — the same question Melbourne's own run of ambitious openings has been testing this year. Stanley's answer, for now, is a 200-seat room built to find out.
