Tom Sellers opens The Penn at Stoke Park in Buckinghamshire

The 48-cover dining room is the first of five food and drink concepts on the estate to open to the public. The hotel and spa still have no reopening date.

Tom Sellers has opened The Penn at Stoke Park, the 300-acre estate in Stoke Poges, Buckinghamshire, with its first lunch and dinner services on Monday 26 October. It is the first stage of the estate’s reopening and the first of five food and drink concepts there to reach the public.

The dining room has 48 covers, plus an eight-seat private room set beneath a tropical aquarium, with interiors by Studio Shayne Brady. Sellers, whose Restaurant Story in London holds two Michelin stars, sets the culinary direction. In the kitchen he works with Dom Robinson, formerly chef-patron of The Blackbird, and Tom Phillips, through HiStory Hospitality, the company behind Story. The restaurant takes its name from John Penn (1760-1834), who shaped the estate.

What The Penn at Stoke Park serves

The Penn opens first; the Terrace & Glasshouse waits until April 2027 for public bookings.

The menu is à la carte only, with no tasting menu: British culinary history and seasonal produce cooked with classical French technique. Starters include Burgundy-poached oysters with horseradish and saucisson de Lyon, and a terrine of spiced pig’s head with langoustines and brown butter naan. Among the mains are Chiltern Hills venison with Jerusalem artichokes, quince and wild mushrooms, and turbot with choucroute and sauce lie de vin. Duck à l’orange and a chateaubriand Rossini are served for two, and dessert includes a chocolate Negus named after Nico Ladenis.

According to La Revue des Hôtels, starters at The Penn at Stoke Park cost £22-35, mains £32-48, the dishes for two £110 and £120, and desserts £14-18. Stoke Park’s website adds a 12.5% discretionary service charge. Lunch runs from noon to 2pm and dinner from 6pm to 8.30pm, seven days a week, and non-residents can book. Part of the produce comes from the estate’s kitchen garden, run by Kate Nannery, formerly of Le Manoir aux Quat’Saisons.

“Storytelling through food is at the heart of everything we do,” Sellers said in the opening announcement, as quoted by La Revue des Hôtels.

Four more rooms on a slower clock

The Piano Bar, built around classic cocktails and martinis, and The Tea Room arrive in the same phase as The Penn, Hospitality & Catering News reported. The Clubhouse, with pub classics and Indian dishes, has been open to golfers since spring, according to The Golf Business. The Terrace & Glasshouse takes private events from 26 October but opens to public bookings only in April 2027.

The 49-room hotel and the spa remain closed, with no date given. In September, the plan for Tom Sellers’ five restaurants at Stoke Park was for all of them to open in October. With The Penn now open, the Terrace has slipped to next spring.
