Ente returns to Wiesbaden after a season in a monastery

The one-star kitchen of chef Michael Kammermeier leaves Kloster Eberbach for a stopgap Wiesbaden address, ahead of the Nassauer Hof's eventual reopening.

One-star restaurant Ente returns to Wiesbaden on 18 November 2026, moving into a stopgap address at Webergasse 8 after a season spent inside Kloster Eberbach during the Rheingau Musik Festival.

Chef Michael Kammermeier, who has led Ente's kitchen since 2002, and restaurant manager Jimmy Ledemazel confirmed the move in a statement reported by tageskarte.io on 27 October 2026. The new address sits a short walk from the Hotel Nassauer Hof, Ente's home before the hotel's current renovation.

The sequence began when the Nassauer Hof's renovation plan was confirmed, prompting Ente's first move into the Pfortenhaus at Kloster Eberbach, a room for about 40 guests, with Kammermeier's full kitchen team kept intact throughout.

A restaurant can hold its star through two addresses in a year, as long as the kitchen stays the same.

A season inside a Cistercian abbey

Ente spent its interim months at Kloster Eberbach, the former Cistercian monastery in the Rheingau, working alongside the Stiftung Kloster Eberbach for the length of the Rheingau Musik Festival season. "We are extremely grateful to the Stiftung Kloster Eberbach, and especially to its chairman, Julius Wagner," Kammermeier said.

Ledemazel said the team was looking forward to returning to Wiesbaden, describing the abbey stay as a temporary home rather than a lasting one. Kloster Eberbach's vineyards sit inside the Rheingau's 2026 harvest, giving Ente's temporary kitchen an unusually direct line to the region's Riesling.

Why Ente returns to Wiesbaden first

The Nassauer Hof is partway through a renovation set to cut its room count from 159 to 104 while the restaurant is rebuilt around it. Reports on the project's timeline have varied, and neither the hotel nor Ente has published a confirmed date for moving back into the finished building.

Until then, Webergasse 8 keeps Ente's one Michelin star in central Wiesbaden rather than in the countryside. For a kitchen that has changed address twice in a single year without changing hands once, the move reads as patience with a plan rather than a restart, a pattern playing out elsewhere in German fine dining this year.
