50 Best Signature Sessions: Niland and the Torres twins in Lima
Six visiting kitchens, from Barcelona to Sydney and the Indian Himalaya, will cook in Lima restaurants in the week The World's 50 Best Restaurants is announced there.

The 50 Best Signature Sessions will put six visiting kitchens, among them Sergio and Javier Torres and Josh Niland, into Lima restaurants between 1 and 5 November, the week The World's 50 Best Restaurants 2026 is announced in the city.
The line-up comes from PromPerú, Peru's trade and tourism commission and the event's partner, and EFE reported it on 19 October. According to EFE, the ceremony is on Wednesday 4 November at the Teatro Municipal, the first time the list is read in South America. Beyond the tasting menus, our guide to what to eat in Lima covers the rest of the city.
Who cooks where at the 50 Best Signature Sessions
A tourism body pays; the guest kitchens, cameras and travel writers spend the week in its dining rooms.
The week opens on Sunday 1 November with two meals. At lunch, Prateek Sadhu of Naar, in Kasauli in the Indian Himalaya, joins Juan Luis Martínez at Clon in Barranco; Encocina reports Tibetan barley soup and Himalayan tubers on the menu. At dinner, Alejandro Chamorro and Pía Salazar of Nuema in Quito, both formerly at Astrid y Gastón, cook Nikkei with the founders of Shizen, Mayra Flores, Renato Kanashiro and Coco Tomita.
On Monday 2 November the Torres twins, whose Cocina Hermanos Torres in Barcelona holds three Michelin stars and a green star, cook at Cosme with James Berckemeyer. On the day of the ceremony, Niland, of Saint Peter in Sydney and its whole-fish cooking, shares a lunch at Rafael with Rafael Osterling. On Thursday 5 November, Santiago Lastra of Kol in London cooks over wood at Sapiens with Jaime Pesaque of Mayta.
PromPerú also lists Rocco Trattoria and Locale Firenze, number 33 on The World's 50 Best Bars 2026, working with Peruvian chefs and bartenders. Infobae reported a presale from 16 October and general sale from 23 October. Seats are limited, and no prices have been published.
What Lima buys with a week of guest chefs
Lima only became the host in July, when the organisers moved the 2026 edition from Abu Dhabi, as we reported at the time. The 50 Best Talks follow on 3 November.
That is how a host-city deal works: a tourism body pays, and in return the guest kitchens, the cameras and the travel writers spend the week in its dining rooms. Lima hardly needs the introduction, with Maido named the best restaurant in the world in 2025 and Central in 2023. What the sessions add is a timetable for the people flying in, and a reason to book a table beyond the gala.
Full details and booking options for each meal are due on 23 October. The ranking itself is read on the evening of 4 November, a few hours after Niland's lunch service at Rafael.
