Niko Romito opens Da Niko inside Bulgari Hotel Milan

The three-Michelin-star chef trades a tasting menu for shareable Italian classics, with ACPV redesigning the dining room around sofas, terracotta and a library corner.

Niko Romito opens Da Niko, a shareable, informal restaurant inside the Bulgari Hotel Milano, replacing the fine-dining room he has run there since 2018.

Da Niko opened on 1 September 2026 at the hotel on Via Privata Fratelli Gabba, closing out the Il Ristorante era and starting Romito's ninth year as Bulgari's kitchen partner in Milan. Guests now order à la carte instead of following a set tasting menu, and dishes are built to be split across the table rather than plated for one.

Da Niko replaces a decade of fine dining

A shared plate leaves less room to hide behind technique than a full tasting menu.

The menu reads as a shortlist of Italian standards rather than a chef's showcase: spaghetti al pomodoro, vitello tonnato, cotoletta alla milanese, fried chicken, fried pizza, veal meatballs with salsa verde and lobster brioche. Filled pastas, raw preparations and a sole meunière carved tableside sit alongside zabaione for dessert.

Giorgio Fuda, who worked with Romito in Shanghai, runs the kitchen day to day. Romito, who holds three Michelin stars at Reale in Castel di Sangro, keeps the same emphasis on raw ingredient quality and flavour synthesis that built his reputation, applied here to plates built for sharing rather than solo composition.

ACPV reworks the dining room

Studio ACPV Architects, led by Antonio Citterio and Patricia Viel, redesigned the space with smaller tables, sofas that break up the room's former formality, terracotta tones, teak furniture and willow-framed mirrors. Ginori 1735 ceramics sit on every table, and a corner is now a small library dedicated to Milan. A new cocktail bar with an oval counter opens onto the hotel garden.

Da Niko runs from breakfast through aperitivo, adding a caffetteria the previous restaurant didn't have. It joins the hotel's existing Bar, Garden and Pizza Bar by Pier Daniele Seu, both of which stayed open through the renovation.

Neither Bulgari nor Romito's group has published a price list for Da Niko, and neither has said whether the format will extend to other Bulgari properties. Reale, Romito's three-star restaurant in Castel di Sangro, continues to run on its existing tasting-menu format. The opening adds to a busy year for Milan restaurant news, following WAU's arrival as the city's first Malaysian restaurant earlier this month.
