Forbici London opens at 120 Tooley Street on 27 October

The Manchester pizzeria that cuts every pie with scissors brings its biga dough to London Bridge, three months after a Milan ranking placed it among the world's top 100.

Forbici London opens on Tuesday 27 October at 120 Tooley Street, by London Bridge, the first site in the capital for the Neapolitan pizzeria that Individual Restaurants launched on Cross Street in Manchester in spring 2025.

Time Out London and the Evening Standard reported the address and date on 30 September. The name means scissors in Italian, and Forbici London keeps the house rule from Manchester: every pizza is cut into four at the table with a pair of shears.

The ranking behind the headlines is The Best Pizza Awards, whose Top 100 Best Pizzas in the World was presented in Milan on 24 June. Time Out puts Forbici at 83rd; Restaurant Online reported 84th. Either way it was one of two British entries, with London's Crisp Pizza. It is not the 50 Top Pizza list, which in September named Napoli on the Road, in Chiswick, the world's best pizzeria and did not include Forbici.

Scissors at the table are a gimmick; a 12-hour biga at London Bridge rents is the actual bet.

What Forbici London will serve

The dough is a biga, a pre-ferment Forbici describes as three-generation, proofed for 12 hours at 24°C. Dine Out magazine listed the suppliers when Manchester opened: Molini Pizzuti flour, San Marzano DOP tomatoes from Solania and fior di latte from Vico Equense.

Two pizzas have been named for Tooley Street: Provola e pepe, with tomato, smoked provola, black pepper and basil, and Porcini e tartufo, a white base with fior di latte, porcini, truffle sauce and chives. Prices for Forbici London have not been published. The pizzaiolo is Davide Argentino, whose family runs two bakeries in Naples, according to The Manc.

From Cross Street to London Bridge

The brand has moved fast. A Sheffield restaurant opened in 2026 and a second Greater Manchester site followed at the Trafford Centre this summer. Marco Pierre White, who ate at Cross Street, called it the very best pizza of his life, a line the group now repeats in every announcement.

Forbici London at Tooley Street is the first of two central London sites the group was looking for in July. Its chief executive, Andrew Garton, told Restaurant Online that if the company can fund 20 openings itself, it will open 20. London Bridge, with Borough Market and its weekday office crowd a few minutes away, is where that arithmetic gets tested from 27 October.
