Michelin Guide Spain adds 20 restaurants, Formentera to Pamplona
Inspectors listed Ramón Freixa’s new table in Formentera, a Japanese-Navarrese counter in Pamplona and a former sandwich bar near Valencia. Stars come later, in Huesca on 24 November.

The Michelin Guide Spain added 20 restaurants to its Spanish selection on 17 September, from Ramón Freixa’s new table in a Formentera hotel to a sushi counter in Pamplona, the Spanish news site Que.es reported. None of them has a star yet. The additions carry a “New” label on the guide’s website and app, while stars and Bib Gourmands are announced at the annual ceremony, the site noted.
From Cala Saona to a century-old house
In Formentera, Sol Post Ramón Freixa sits inside the Cala Saona hotel. Its tasting menu, Terres Margantes, is built on island produce; one dish pairs espardeñas, the sea cucumbers prized on the Spanish coast, with rice cooked to a crisp socarrat.
A place in the guide is a first cut; the stars are decided in Huesca in November.
In Pamplona, Koku is run by Yike Feng and Dong Li, a couple from China’s Zhejiang province who met working in San Sebastián. Sushi shares the menu with a fusion tasting menu of about eleven courses that pairs Navarre produce with East Asian condiments.
Barcelona’s Chambacú, led by Colombian chef Santiago Sánchez, draws on pre-colonial, colonial and African influences across three spaces called El Patio, Candela and Memoria. In Torrent, near Valencia, Farigola & Menta opened two decades ago as a modest sandwich bar; under David Joaquín it now serves a savoury torrija with a Bloody Mary emulsion, smoked eel and trout roe.
Alberto Molinero’s Erre de Roca has moved from Miranda de Ebro to a century-old house in Ventas de Armentia, with two tasting menus, Caliza and Arcilla. The other 15 entries are Angelita and Boccondivino in Madrid, APAR and Milla Lore 124 in San Sebastián, LiliCook Cocina and Portal del Lino in Salamanca, Aquiara in Ciutadella de Menorca, Ciento80 in Ibiza, Sa Talassa in Santa Eulària, Vereda in Ávila, Barra/M in Barcelona, No Existe in Pozuelo de Alarcón, é Restaurante in Marín, Mirador de Deyo in Villamayor and Versátil-Bodega in Zarza de Granadilla.
What the Michelin Guide Spain does next
Over the summer the guide added 47 restaurants, 12 in June, 20 in July and 15 in August, InfoHoreca reported on 1 September.
Which of these restaurants earn stars will be known on 24 November, when the 2027 selection is presented at the Palacio de Congresos in Huesca. Carmelo Bosque, chef of the city’s Lillas Pastia, is in charge of the gala dinner, El Español reported in May. The province of Huesca has 18 restaurants in the 2026 guide, eight of them with stars, according to the same report.
September has not only brought arrivals to Spanish fine dining. Madrid lost the Michelin-starred Santerra this month, and in Barcelona Slow & Low is trading its Michelin star for tapas. The guide’s list grows; the map of stars is redrawn in November.
