Santerra closure: Madrid loses a Michelin-starred game restaurant

The Madrid restaurant, known for its game cooking and a twice-awarded croqueta, has closed after its operating company entered pre-insolvency proceedings in May, according to Spanish media.

The Santerra closure leaves Madrid without one of its Michelin-starred restaurants, according to El Español and Infobae, which reported on September 16 that the game-focused restaurant in the Salamanca district is no longer trading. El Español said it had visited the premises on Calle de General Pardiñas and found that they had been closed for some time.

Infobae, citing the trade publication Sivarious, reported that the premises are being offered for transfer on the property portal Idealista. Neither outlet reported a date for the last service.

Santerra opened in 2017 with chef Miguel Carretero, who is from Ciudad Real, at the stove, and built its menu around game. It received a Repsol Sun in 2021 and a Michelin star in 2024, according to both outlets. Its tasting menus cost between €115 and €165, Infobae reported.

A croqueta title and a Michelin star

Beyond the dining room, the restaurant was known for its croqueta. According to El Español, it won the title of best croqueta in the world at the Madrid Fusión congress in 2018 and returned in 2022 to take the title of “champion of champions”.

Carretero left Santerra in January 2026, El Español reported at the time. In a statement quoted by the newspaper, the restaurant said that Máximo Benages, until then its second chef, would lead the kitchen, that Owen Duarte would remain head of service and that its standards and culinary proposal would not change.

Losses before the Santerra closure

The company closed 2025 with losses of €342,900, Infobae reported, citing Sivarious. El Español reported that the company’s equity had turned negative, with a shortfall of €240,027 at the end of 2025, and that it had entered pre-insolvency proceedings, known in Spain as preconcurso, on May 16, 2026.

The Santerra closure comes as the cost of eating out in Spain continues to rise: restaurant prices in Spain were up 4.4% in August. New tasting-menu projects are still opening in the capital, among them Sexto, a 20-seat tasting menu in Madrid.

Other Spanish fine-dining addresses have announced closures this month. Playing Solo, Luis Caballero’s Michelin-recommended restaurant in Madrid’s Malasaña neighbourhood, will serve its last meal on September 26, according to Infobae and El Español. In Barcelona, chef Frank Beltri’s one-star Slow & Low is due to close on October 17, El Español reported.
