The 50 Best Restaurants 2026 list, announced at the Teatro Municipal de Lima on 4 November, puts Asador Etxebarri in Atxondo at No.1, ahead of Gaggan in Bangkok and Alchemist in Copenhagen. Below is the full ranking from 1 to 50, with the special awards and the restaurants that moved most.

The ranking, known until this year as The World's 50 Best Restaurants, is voted by an academy of more than 1,100 chefs, critics and well-travelled diners split across 28 regions, with an even gender split and at least a quarter of voters replaced every year; Deloitte adjudicates the count. It was the first edition held in Peru, after the organisers moved the ceremony from Abu Dhabi. Last year's winner, Maido, now sits in the Best of the Best group and can no longer be voted for. We looked at what the ceremony means for Lima's restaurant economy separately.

The 50 Best Restaurants 2026 list in numbers

A grill in a Basque hamlet now sits above every tasting menu on the planet.

The 50 Best Restaurants 2026 list covers 28 territories on six continents, with 11 new entries and five re-entries. Bangkok is the city with most names, five (Gaggan, Sorn, Sühring, Nusara and Potong), followed by Copenhagen and Lima with three each. Italy places five restaurants and Spain four, all of them in the Basque Country, Madrid or Barcelona.

1. Asador Etxebarri, Atxondo

Victor Arguinzoniz cooks every course over wood he selects and burns himself, in a stone farmhouse in the hamlet of Axpe, at the foot of Mount Anboto. The 14-course tasting menu is built on very few ingredients per plate. The restaurant was No.2 in 2025 and also takes the title of Best Restaurant in Europe. Our news story on Asador Etxebarri's win has the background.

2. Gaggan, Bangkok

Gaggan Anand's counter in Bangkok serves a long, playful progressive Indian menu and is named Best Restaurant in Asia. It is the highest of the five Bangkok entries.

3. Alchemist, Copenhagen

Rasmus Munk's restaurant runs dinner as a staged, multi-sensory show of around 50 small servings, with projections and themes that deliberately unsettle the diner. It stays on the podium.

4. Quintonil, Mexico City

Jorge Vallejo and Alejandra Flores build their menu in Polanco around Mexican vegetables, herbs and insects from small producers. Quintonil is named Best Restaurant in Latin America.

5. Wing, Hong Kong

Vicky Cheng's Wing cooks contemporary Chinese food with Cantonese technique and preserved ingredients at the centre of the menu, and is the higher of two Hong Kong restaurants in the top ten.

6. The Chairman, Hong Kong

Danny Yip's Cantonese restaurant in Central is known for local sourcing and its steamed flowery crab with aged Shaoxing wine. It sits one place behind Wing.

7. Kjolle, Lima

Pía León's restaurant in Barranco cooks Peru by altitude and ecosystem, with tubers, grains and fruit from the Andes and the Amazon. It is the best placed of three Lima restaurants, on home ground.

8. Kadeau, Copenhagen

Nicolai Nørregaard's restaurant, rooted on the island of Bornholm, works with preserved, fermented and foraged Danish produce. It climbs 33 places, the biggest jump of the year, and wins the Highest Climber award.

9. Diverxo, Madrid

Dabiz Muñoz runs Spain's most maximalist tasting menu, mixing Spanish, Asian and Latin American references at high volume. It is the best placed restaurant in the Spanish capital.

10. Plénitude, Paris

Arnaud Donckele's restaurant inside Cheval Blanc Paris is built around sauces, reductions and broths, each one a recipe of its own. It closes the top ten as the highest French entry.
