L'Abysse Dubai opens on 19 October with 34 seats on the Palm

Yannick Alléno adds a sushi counter and an Italian seafood terrace to One&Only The Palm on the same day. The 13-step omakase has a date, a room plan and a dress code, but no published price.

L'Abysse Dubai, Yannick Alléno's sushi counter, opens on 19 October at One&Only The Palm with 34 seats and a 13-step omakase menu. A second Alléno restaurant, the Italian seafood terrace Casea 101, opens at the same resort on the same day.

That gives the French chef three dining rooms in one hotel on Palm Jumeirah. The first, STAY by Yannick Alléno, kept its two stars on 6 October, when the Michelin Guide Dubai 2026 named 20 starred restaurants. The resort's own page and the trade title Caterer Middle East, which reported the date on 7 October, agree on the essentials. Neither gives a price.

With 34 seats and a one-hour seating window, the scarce ingredient is the reservation.

The room is split in three: a ten-seat sushi counter in the middle, 16 seats in the main dining room and a private room for eight. Sushi master Ken Ishihata leads the counter and prepares each course in front of the guests.

The menu runs to 13 "sequences" grouped in five "movements": small bites, savoury plates, nigiri, a transitional course and sweets. Caterer Middle East lists sea urchin with ginger mayonnaise, lightly grilled langoustine and an azuki and combawa millefeuille. Alléno applies what he calls his "cuisine of time", meaning maturation, extraction and exact serving temperature, to Japanese sushi technique.

Service is dinner only, Wednesday to Monday, closed on Tuesday. Guests are seated from 6.30pm and the last seating is at 7.30pm, a one-hour window that leaves room for a single service a night. Children are admitted from the age of nine and men are asked to wear full-length trousers.

L'Abysse Dubai is the fourth address for a concept that started at Pavillon Ledoyen in Paris and went on to Monaco and Osaka, and the first in the Middle East. "Dubai was the natural choice for its next chapter," Alléno told Caterer Middle East. Laurence Bonnel and RoWin'atelier designed the interior.

Casea 101 opens the same day on the water

Casea 101 is the larger, looser counterpart: Italian coastal cooking with seafood towers, crudos, the catch of the day cooked over fire and pizzas from an open kitchen. It has a central indoor-outdoor bar and a shaded terrace over the water, and guests can arrive by boat from the marina. It opens daily from 12.30pm, with the last dinner seating at 10.30pm.

Bookings for both go through SevenRooms. None of the sources consulted gives the price of the 13-sequence menu at L'Abysse Dubai, the one figure still missing ten days before opening.
