Milpero wins Denver’s only new Michelin star
Chef Johnny Curiel’s 18-course ode to nixtamalized corn and mole is the sole new addition as Colorado’s Michelin guide goes statewide.

Milpero, chef Johnny Curiel’s Mexican tasting-menu restaurant in Denver’s RiNo neighbourhood, has won a Michelin star.
The Michelin Guide announced the recognition on 14 September as part of its first statewide Colorado selection, which replaces the three-year deal that covered only Denver, Boulder and Aspen since 2023. Milpero was the only new star awarded in the state this year.
Curiel opened Milpero on 13 May 2026 with his wife and business partner, Kasie. The 18-course tasting menu is built around nixtamalization, the process that turns dried corn into masa, using three heritage varieties — Oaxaca Green, Chihuahua Blue and Concha White — grown exclusively for the restaurant across 20 acres near Boulder through a partnership with the MASA Seed Foundation.
A star for corn grown twenty miles away, not for a reputation imported from anywhere else.
“All of the corn we utilise, 100 percent, is our own grown corn,” Curiel has said of the arrangement, which supplies the kitchen year-round.
Milpero’s masa-built menu
The kitchen presents different shapes of masa across the first eight courses. One signature is the raspada tortilla, cooked on one side only, its raw underside scraped with a metate until it turns cracker-crisp. Later in the meal comes a tamal topped with Hokkaido uni and a chlorophyll-bright salsa verde made from hoja santa leaf.
Mole carries much of the menu’s weight: six dishes draw on one of five varieties, including a mole amarillo with pulque-roasted squab and a mole manchamanteles — literally “tablecloth stainer” — served with lamb and adzuki beans. Chochoyotes, masa dumplings, are folded into potato and braised in the same mole.
Colorado’s full star tally
Curiel already held two stars before Milpero: Alma Fonda Fina, starred in 2024, and Mezcaleria Alma, starred in 2025, both also in Denver. A third restaurant, Cozobi Fonda Fina in Boulder, carries a Bib Gourmand from last year.
Colorado’s 2026 guide names ten starred restaurants in total, thirteen Bib Gourmand addresses — three of them new, Annette, Pig and Tiger and Rougarou — and eleven Recommended restaurants added under the state’s newly expanded coverage, which follows Michelin’s wider push into the American Southwest.
The corn itself carries its own geography: Oaxaca Green is one of the three varieties on Milpero’s tasting menu, a reminder that the state Michelin just discovered a menu built from the region covered in Amuse’s own guide to what to eat in Oaxaca. Denver, a city Michelin only reached in 2023, now holds a Mexican tasting menu with a star earned on ingredients grown a short drive from the dining room.
