Rocambolesco opens with theatrical Italian food in Dubai

Chef Luigi Stinga brings a two-storey, shared-dining Italian menu to SO/ Uptown Dubai Hotel, with tableside spaghetti and a dessert built as a cocktail.

Rocambolesco, a two-storey Italian restaurant, has opened at SO/ Uptown Dubai Hotel, bringing chef Luigi Stinga's contemporary take on shared dining to Uptown Tower.

The restaurant sits on the hotel's lobby level and sixth floor, with indoor, terrace and bar seating; a dinner-only room on the first floor is scheduled to open later in the year. Rocambolesco is open daily from noon, running past midnight on Fridays and Saturdays.

Stinga leads the kitchen as executive chef. He holds the Michelin Guide Abu Dhabi Young Chef Award, earned before moving to Dubai to build a menu the restaurant describes as “Italian in heart, Rocambolesco in attitude.”

Italian grandeur, French nonchalance, Dubai swagger — and a spaghetti finished at the table.

A menu built for sharing

Dishes lean on theatre as much as technique. A yellowtail crudo arrives with mirin dressing, tarragon oil, pickled onion and herb breadcrumbs; a spaghetti with Piennolo tomato sauce, tomato pearl and basil is finished tableside “with a little theatre,” in the kitchen's own words.

The bar list follows the same logic. The Lieto Fine cocktail pairs cold brew with Lucano Caffe liqueur, mascarpone caramel foam and tonka bean — a dessert built as a drink rather than the other way round.

Velvet, terracotta and Dubai swagger

The room mixes velvet banquettes, terracotta plates, marble tables and emerald seating against curated art walls. The restaurant's own description sums up the intent: “Italian grandeur, French nonchalance, Dubai swagger.”

Rocambolesco arrives in a city that has spent 2026 adding Italian and Indian addresses in equal measure — Uptown Dubai's newest tenant joins a stretch of openings that includes Gymkhana's own Dubai debut at DIFC earlier this year. Where Gymkhana leaned on two Michelin stars from London, Stinga is building his reputation on the ground, one tasting menu and one Abu Dhabi award at a time.

Rocambolesco sits inside SO/ Uptown Dubai, the lifestyle hotel anchoring Uptown Tower's wider dining precinct, where developers have pitched restaurants as central to the district's identity rather than an amenity bolted onto guest rooms. The tower's food and beverage line-up has grown through 2026 as more of its floors have opened to the public.

No opening-week prices have been published; the restaurant's booking line is taking reservations for lunch and dinner service now.
